It begins in the majestic Pine Valley mountains and descends nearly 2600 feet through scenic southwest Utah, to the beautiful Worthen Park. The St. George Marathon is a point-to-point race which is USA Track & Field Certified & Sanctioned. Runner`s World listed the St. George Marathon as the fastest fall marathon.

1 C. Pumpkin Puree

1 C. Granulated Sugar

1/2 C. Oil (Canola or Vegetable)

1 TSP. Vanilla

1 Large Egg

 2 C. Flour

2 TSP. Baking Powder

1 TSP. Cinnamon

1/2 TSP. Salt

1 TSP. Baking Soda

1 TSP. Milk

1 C. Semi-Sweet Chocolate Chips


Preheat oven to 375 degrees. Lightly grease cookie sheet. Combine pumpkin, sugar, oil, vanilla, and egg. Mix until well combined. In a separate bowl, stir together the flour, baking powder, cinnamon, and salt. In a small bowl, dissolve baking soda with the milk. Add both the dry flour mixture and the wet baking soda mixture to the pumpkin mixture. Add in chocolate chips. Use a medium cookie scoop, to drop mounds onto the cookie sheet. Bake 10-12 minutes. 2 c. chicken (cooked and shredded)

4 oz. cream cheese (softened)

1/3 c. salsa

½ tsp. cumin

1 tsp. chili powder

1 tsp. garlic powder

¼ tsp. salt

1 tbsp. green onion

2 tbsp. cilantro

1 tbsp. lime juice

1 c. Colby or spicy jack cheese

10 flour tortillas (small)


1. Pre-heat oven to 425. Line baking sheet with foil and spray. 2. Combine cream cheese, salsa, cumin, chili powder, garlic powder, lime, and salt. Add in shredded chicken, cheese, green onions and cilantro. 3. Add about 3 TBSP. of the chicken mixture inside the tortilla and roll up. Place it seam side down on the baking sheet. Just in case you need more than a funnel cake to convince you, here's why you MUST attend the Washington County Fair this week, August 7th-10th. 

I mean, after all, is there anything that screams summer more than the Washington County Fair? The first fair was organized back in 1860, and held in Washington City at the sight of John D. Lee's mansion. "Washington was the county seat and St. George had not yet been settled. The number of people in the entire Virgin River Basin, probably numbered fewer than one hundred families."
