February might be the shortest month of the year, but can you believe that it has almost come and gone? We've celebrated Groundhog's Day (thankfully, we woke up to a new day on the third), National Tater Tot Day, Chinese New Year, Single's Awareness Day, Some of us might still be sneaking Valentine's candy from our children, and this Monday will be President's Day.

We've laughed at our favorite Super Bowl Commercials {I'm grateful to be at a place in my life where I love sugar enough to not care if its Pepsi or Coke}...

Also, who would have thought that watching the half-time show would N-E-V-E-R be quite as bad as reading about it on social media for the next 27 days straight, and we have almost survived the, "Deadliest Flu Virus Ever"…

INGREDIENTS

1 ¼ C. Flour

½ TSP. Baking Powder

1/8 TSP. Salt

¼ C. Butter (Softened)

4 Oz. Cream Cheese (Softened)

¾ C. Sugar

1 Egg

1 TSP. Vanilla

¾ C. Chopped Strawberries

2 TBSP. Lemon Juice

1-2 TBSP. Flour

5 Oz. White Chocolate (Chopped)

INSTRUCTIONS

Preheat oven to 350. Poor lemon juice over strawberries, drain after a few minutes. Whisk together dry ingredients and set aside. Beat butter with sugar and cream cheese until light and fluffy. Add egg and vanilla, mix. Add dry ingredients. Stir in chopped white chocolate. Sprinkle strawberries with 1-2 TBSP of flour, toss until coated, then stir them very gently into the batter.
